Pierogi are not dumplings. They are a category of being. They can be savoury (potato-cheese ruskie, sauerkraut-mushroom, meat) or sweet (strawberry, cherry, blueberry). The savoury are dinner. The sweet are summer dessert.
In our pierogi class — held in the apartment of Pani Halina, who learned from her mother who learned from hers — the rule is simple: do not over-flour.
