Christmas in Poland begins at sundown on December 24th — Wigilia. The first star is watched for from windows. An empty place is set at the table for an unexpected guest. Then come the twelve dishes — one for each apostle. Beetroot soup with mushroom uszka. Carp baked in jelly. Pierogi with sauerkraut and forest mushrooms. Kompot — a dark fruit infusion served warm. And the makowiec — poppyseed roll, blackened and sweet.
